Cream Cheese Stuffed Gypsy Peppers

What’s so special about gypsy peppers?

Gypsy peppers are a cross between sweet Italian bull horn peppers and bell peppers. These peppers were developed to resist the tobacco mosaic virus, a common plant disease. There is no heat to the gypsy pepper whatsoever, however, they do have a blast of sweetness—almost floral in flavor.

Ingredients

5 gypsy peppers, sliced in half and deseeded

1 cup cream cheese

1/2 cup green onion, white and green parts, chopped

1/3 cup sharp cheddar, shredded

2 cloves garlic, minced

2 tablespoons taco seasoning

1 teaspoon salt

1 teaspoon pepper

2 tablespoons milk

Instructions

  1. Preheat the oven to 365 degrees Farenheight.

  2. In a food processor, mix the cream cheese and all ingredients (excluding the peppers), until smooth and fully incorporated.

  3. Fill each pepper with enough cream cheese to fill to the edges.

  4. Place a lined baking sheet and bake uncovered for 10-15 minutes. Allow to cool slightly.

  5. Garnish with extra taco seasoning and/or chopped green onions and serve!
