Cream Cheese Stuffed Gypsy Peppers

What’s so special about gypsy peppers?
Gypsy peppers are a cross between sweet Italian bull horn peppers and bell peppers. These peppers were developed to resist the tobacco mosaic virus, a common plant disease. There is no heat to the gypsy pepper whatsoever, however, they do have a blast of sweetness—almost floral in flavor.
Ingredients
5 gypsy peppers, sliced in half and deseeded
1 cup cream cheese
1/2 cup green onion, white and green parts, chopped
1/3 cup sharp cheddar, shredded
2 cloves garlic, minced
2 tablespoons taco seasoning
1 teaspoon salt
1 teaspoon pepper
2 tablespoons milk
Instructions
Preheat the oven to 365 degrees Farenheight.
In a food processor, mix the cream cheese and all ingredients (excluding the peppers), until smooth and fully incorporated.
Fill each pepper with enough cream cheese to fill to the edges.
Place a lined baking sheet and bake uncovered for 10-15 minutes. Allow to cool slightly.
Garnish with extra taco seasoning and/or chopped green onions and serve!
