Honey Poached Apricot Coulis


Don't let your soft apricots go to waste! Try this honey-poached apricot puree to add some flavor to yogurt, ice cream, or even chicken! Use water as the base to cook your apricots or add flavor complexity using white wine. This recipe only takes 20 minutes and makes about 2 cups of coulis (a fancy French term for a thin fruit or vegetable puree used as a sauce).

This recipe is inspired by our CSA program, in this week’s box of goodies - we had apricots! Apricots are in season in Colorado from mid/late July through September. Give this recipe a try during this season! You can find farm-fresh apricots at our store, or the farmer’s market.
